This is a 100% Bolgheri Vermentino. Its name expresses the close bond between this Mediterranean grape variety and the terroir of Bolgheri: in essence, it is the result of hard work in vineyards and the ripening effect of the sun. This wine is a special favourite of Marilisa Allegrini. It embodies the colours, fragrances and flavours of these lands close to the sea.
In the pre-fermentation phase, maximum attention is paid to preserving aromatic precursors. Alcoholic fermentation, at low temperatures, takes place in steel, followed by ageing on the lees with bâtonnage for 5 months, then 1 month in the bottle.
Tasting Notes: Golden yellow with greenish hues, Solosole opens with notes of stone fruits such as peach and apricot, followed by sulphurous and flint-like notes. It has a medium body, with generous fruit character. The finish is long, dry and zesty, especially when young. It evolves interestingly in the glass, indicating its excellent ageing capacity.
Food Pairing: Solosole pairs with appetizers, raw fish and, thanks to its freshness and aromatic character, fried seafood, fish stews and vegetable dishes. Serve at 8-10°C and open just before serving.

Vermentino/Pigato
Vermentino is a white wine grape, also known as Rolle (in Rousillion and Provence) & Malvoisie in Corsica. It migrated from the Iberian Peninsula in the late 1300s (Madeira?) into Corsica, Sardinia, Liguria and Tuscany during the 15th century.
Traditionally believed to be related to Malvasia, recent DNA studies have instead revealed traits in common with the Hungarian Furmint.
Vermentino di Gallura DOCG is one of the most famous incarnation - The grape has recently become fashionable in parts of central Italy. Often blended for its structure, on its own the grape displays aromatic ripe peach and honeyed notes and a full body.
