Winemaking:
To preserve their integrity, grapes are carefully harvested and sorted out by hand. Following the pneumatic press, juices stay in a vat overnight for a cool settling down and then are directly filled in tanks or barrels depending on their aromatic profile.

Aging: Fermentations and aging are taking place for 30% in traditional Burgundian 400 liters barrels and 70% in stainless steel vats for 10 months. We only use light-toasted French oak coming mainly from Bourgogne, Allier, and Vosges forests

Tasting Notes: Nice light gold color with green tints. The nose is intense, net, and complex. It first shows yellow fruit notes and then develops some mineral and peppery characters. The second nose develops white floral scents. In the mouth, the wine shows a nice volume. It is persistent with good acidity and nice mineral notes.

Food Pairing:  Will pair nicely with salmon cooked with a shallot sauce, and some sautéed vegetables but also with some Comté or Morbier.

Mercurey is a village in the Côte Chalonnaise sub-region of Burgundy. It is one of the five communal titles of the Chalonnaise and produces predominantly red wines from the Pinot Noir grape variety. The appellation"s relatively rare Mercurey Blanc wines are made from Chardonnay and account for around 10 percent of the total output. The Côte Chalonnaise was once known as the Région de Mercurey, which gives an idea of how important this particular appellation is to the wider region.

Chardonnay

Chardonnay is the "Big Daddy" of white wine grapes and one of the most widely planted in the world. It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or.

Burgundy is Chardonnay`s spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvelous poise, elegance and balance. They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.

It is quantitatively important in California and Australia, is widely planted in Chile and South Africa, and is the second most widely planted grape in New Zealand. In warm climates Chardonnay has a tendency to develop very high sugar levels during the final stages of ripening and this can occur at the expense of acidity. Late picking is a common problem and can result in blowsy and flabby wines that lack structure and definition.

Recently in the New World, we have seen a move towards more elegant, better- balanced and less oak-driven Chardonnays, and this is to be welcomed.
