Winemaking: 
Manual harvest carried out in the first half of September. After soft pressing, the grapes are subjected to cryo-maceration. Fermentation is carried out in steel tanks. The wine subsequently ages for about 4 months in steel tanks and 2 months in the bottle.

Tasting Notes: 
Medium-intense straw yellow. The nose reveals distinct notes of white flowers followed by fresher jasmine flowers and a crisp and delicate citrus vein. Striking for its decisiveness, medium body, and feistiness, expressed through its fresh palate.

Food Pairing: An ideal aperitif with caviar canapés, frog"s legs, smoked fish dishes and many other hors d"oeuvres. It enhances risotto with saffron. It pairs well with raw fish dishes, tempura, sushi and sashimi, as well as spicy and sweet and sour dishes typical of Asian cuisine. It is also a good match with freshwater fish dishes and grilled seafood and shellfish.

Garganega

The 5th most widely planted white grape in Italy and the main grape used in the production of Soave. It is an abundantly vigorous grape and yields must be kept low for its discreet aromatic qualities to show in the wine.

Garganega reaches its peak in the Soave Classico zone where it constitutes 70-100% of the blend. The best wines are fresh, delicate, well balanced and can be redolent of almonds and citrus fruits. Garganega is also a key component in Bianco di Custoza and Colli Euganei.
