Country: France, Bourgogne, Cote De Nuits
Grape: 100% Pinot Noir
Tasting Notes: Grand-Échézeaux produces a bright, deeply-coloured wine. As a young wine, it develops fine aromas that evoke cherry and cocoa beans, a rare and fine quality sought after in the "climate". As it ages, its fragrances mature into notes of undergrowth, truffle, fine leather and sometimes an almost imperceptible touch of cigar and cedar. Its noble, fine-grained tannins have just the right combination of silkiness and freshness. The finish is extremely long and echoes the same elegant sensations experienced on the nose.

Tip:
heat up your glass a few minutes in the Palm of your hands, to fully enjoy the aroma.

Pairing
: Duck, Goose and Game Birds

Domaine Gros Frère et Soeur
Is a Burgundy wine producer based in Vosne-Romanée. It makes a range of wines from the region`s top vineyards, including the grand crus Richebourg, Échezeaux, Grands Échezeaux and Clos de Vougeot. The Domaine also makes white and red Hautes Côtes de Nuits wines, and wines from several premier cru vineyards in Vosne-Romanée.

Gros Frère et Soeur has its origins in the 1963 division of the Louis Gros estate. This was divided between his four children, and Gustave and Colette Gros combined their shares to form Gros Frère et Soeur. It is currently run by Colette`s nephew Bernard Gros.

THE GRAPE

Pinot Noir

Pinot Noir is probably the most frustrating, and at times infuriating, wine grape in the world. However when it is successful, it can produce some of the most sublime wines known to man. This thin-skinned grape which grows in small, tight bunches performs well on well-drained, deepish limestone based subsoils as are found on Burgundy`s Côte d`Or.

Pinot Noir is more susceptible than other varieties to over cropping - concentration and varietal character disappear rapidly if yields are excessive and yields as little as 25hl/ha are the norm for some climates of the Côte d`Or.

Because of the thinness of the skins, Pinot Noir wines are lighter in colour, body and tannins. However the best wines have grip, complexity and an intensity of fruit seldom found in wine from other grapes. Young Pinot Noir can smell almost sweet, redolent with freshly crushed raspberries, cherries and redcurrants. When mature, the best wines develop a sensuous, silky mouth feel with the fruit flavours deepening and gamey "sous-bois" nuances emerging.

The best examples are still found in Burgundy, although Pinot Noir`s key role in Champagne should not be forgotten. It is grown throughout the world with notable success in the Carneros and Russian River Valley districts of California, and the Martinborough and Central Otago regions of New Zealand.
