Outer Limits is a new line of Viña Montes wines from various unique terroirs in Chile-Zapallar, Curtiduría, Colchagua, and Itata-to reflect the experience and innovative vision. 

Ageing: 55% of the wine was aged in 3rd-use French oak barrels for 12 months 45% of the wine was aged in cement eggs for 12 months.

Tasting Notes: The nose shows its coastal personality, with a dazzling expression of delicious aromas of red fruits such as strawberries, sour cherries, and fresh plums. A touch of crème de cassis lends complexity to the profile and creates a very good complement to the light aromas of sweet spices on the back. The palate has vibrant acidity that becomes exquisitely juicy yet complex as well as extraordinary volume. Its nearly imperceptible tannins lend structure and character to this delightful Syrah that has come to stay.

Decanting: Recommended, for 30 minutes.

Food pairing: A full-bodied, big wine, ideal with all kinds of meat; especially game and lamb served as tartare, carpaccio, shank, or ribs. Because of the tannins and acidity, it is also perfect with charcuterie (venison sausage goes very well) and great with cheeses such as Gouda, Edam or Brie.

Syrah/ Shiraz

A noble black grape variety grown particularly in the Northern Rhône where it produces the great red wines of Hermitage, Cote Rôtie and Cornas, and in Australia where it produces wines of startling depth and intensity. Reasonably low yields are a crucial factor for quality as is picking at optimum ripeness. Its heartland, Hermitage and Côte Rôtie, consists of 270 hectares of steeply vineyards producing wines that brim with pepper, spices, tar and black treacle when young. After 5-10 years they become smooth and velvety with pronounced fruit characteristics of damsons, raspberries, blackcurrants and loganberries.

It is now grown extensively in the Southern Rhône where it is blended with Grenache and Mourvèdre to produce the great red wines of Châteauneuf du Pape and Gigondas amongst others. Its spiritual home in Australia is the Barossa Valley, where there are plantings dating as far back as 1860. Australian Shiraz tends to be sweeter than its Northern Rhône counterpart and the best examples are redolent of new leather, dark chocolate, liquorice, and prunes and display a blackcurrant lusciousness.
