Soil characteristics: mainly clay-schist (galestro) with clayey limestones.
Harvest: Manual harvest and selection of the grapes in the second half of October.
Vinification: Alcoholic and malolactic fermentation partly in steel and partly in oak vats with maceration on the skins for 30 days with daily pumping over.
Ageing: 24 months in barriques, 40% of new wood, mostly French, part American (approx. 3%) then 3 years in bottle before sale.
Tasting Notes: The Cabernet Sauvignon Collezione de Marchi di Isole e Olena is a Tuscan red wine with an intense ruby colour. The olfactory analysis expresses a bouquet of floral and fruity aroma, embellished with cocoa and tobacco hints. The taste is full-bodied, full, slightly balsamic, the well-balanced tannins give a long persistence. Ageing 24 months in barriques.
