Vinification: The hand-picked grapes were destemmed and processed into stainless steel tanks via gravity flow. One-third of the fruit was macerated for five days prior to fermentation, another third was destemmed and then had 20% of the stems added back for added texture and the final portion of the grapes underwent carbonic maceration. 

Ageing: 5 months in third-use barrels to prevent the transference of excessive oak aromas or flavours.

Storage Recommendation: Can be enjoyed immediately or cellared for up to 5 years.

Recommended Temperature: 12-14 ° C (53-57 ° F)

Tasting Notes: A very fruit-forward nose with aromas of raspberries, sour cherries and blueberries. On the palate, it is light-bodied with refreshing natural acidity that comes through on the long finish.

Pairing: Rabbit stew, slow-cooked legumes such as lentils, and very juicy cuts of meat are ideal with this great wine.
