Vinification and Ageing: Vinified in stainless steel vats with thermoregulation between 18 and 21° C. The wines are then aged in oak barrels for a 10 month period, with at most 10 to 20% new barrels

Tasting Note: Between tradition and modernity, Domaine Coste Caumartin offers wines that, like all the great wines of Burgundy, need a little time to exalt the finesse of the unique aromas specific to Burgundy. But quickly, Clos du Château has a nice touch of minerality that brings a nice freshness. Fat, long and soft, it is nicely balanced in a harmonious finesse.

Food Pairing: This subtle wine is a perfect accompaniment to delicate fish, fried or steamed, scallop shells, carpaccio of tuna or salmon, and scrambled eggs with truffles. It will sublimate the Persil lades (snails of Burgundy, frog legs, ham parsley) and accompany perfectly white meat dishes, fish dumplings. A very seductive and original agreement to recommend: warm goat cheese appetizer or starter or after a meal with dry goat cheese or blue cheese.

The history of the Domaine dates back to the time of the Great Dukes of Burgundy. (1000-1400) The place represented a whole neighbourhood of Pommard. The origin of the current buildings dates back to 1610 up to 1641 the date of the well of the family.  In 1793 the Domaine entered in Coste-Caumartin family thanks to the wedding of Antoine Coste. The family was reputed for its activity as ironmasters. Since then, the Domaine was already highly award-winning, including the gold medal at the Paris world-Wide Fair in 1900. The Domaine was managed by the women of the family, the Coste, Debrois, Chenot and then the Sordet families succeeding one another till now.  The Sordet family is the last family who took over the Domaine. Jerome Sordet runs the vineyards from 1988 and quickly diversify and extends the vineyards from 9 to 12 hectares. In the period 1988 - 1995 acquires two more appellations Saint Romaine and Beaune 1er Cru and builds a cellar and vat room 400m² to improve, modernize and increase production. From 2014 at the Domaine has settled Benoit Sordet, who managed to improve quite the operation of the Domaine. Domaine produces 65.000 bottles per year, 25% white and 75% red wine.

Chardonnay

Chardonnay is the "Big Daddy" of white wine grapes and one of the most widely planted in the world. It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or.

Burgundy is Chardonnay`s spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvelous poise, elegance and balance. They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.

It is quantitatively important in California and Australia, is widely planted in Chile and South Africa, and is the second most widely planted grape in New Zealand. In warm climates Chardonnay has a tendency to develop very high sugar levels during the final stages of ripening and this can occur at the expense of acidity. Late picking is a common problem and can result in blowsy and flabby wines that lack structure and definition.

Recently in the New World, we have seen a move towards more elegant, better- balanced and less oak-driven Chardonnays, and this is to be welcomed.
