Vinification: Vines are grown exclusively on the slopes: the nutrient-poor, limestone-rich soil allows precise yield control, while a warm microclimate favours the ripening of the grapes. Upon being gathered and sorted by hand, the grapes go immediately into a pneumatic press. Pressing is slow and gentle to obtain clear, non-astringent juice. The musts ferment in tanks or oak tuns at controlled temperatures to preserve each wine`s freshness and specific aromatic traits.
Tasting Notes: Very ethereal with citrus and floral aromas, complemented by notes of white-fleshed fruits. On the palate, the crisp and refreshing acidity from Aligoté Doré is balanced by a salty minerality, creating a harmonious finish that reflects the terroir.
Food Pairing: Best served chilled (54°F) as an apéritif, or paired with seafood, goat cheese, Cantal, Beaufort, Parmesan, or Roquefort.
Domaine de Villaine
The winery of the de Villaine family, co-owners of the legendary Domaine de la Rommanée-Conti, is considered the highly regarded jewel of the Cote Chalonnaise. With great devotion, they dedicate themselves in particular to the cultivation of the Aligoté as the unfortunately often misunderstood and sidelined great classic among the grape varieties of Burgundy. De Villaines` decades of work around the Aligoté made a significant contribution to the fact that Bouzeron, the only municipal appellation for this grape variety in Burgundy, was created in 1997. Like the Domaine de la Romanée-Conti, the Domaine de Villaine, which is run by Aubert de Villaine`s nephew Pierre de Benoist, also uses biodynamic farming.

Aligoté
A grape that was first recorded in Burgundy in the 18th century and is still planted almost exclusively there, though there are limited plantings in Bulgaria, Moldavia and even California. It is a moderate-yielding grape that tends to perform best on south-east facing slopes and in warm, dry years.
For your Burgundian vigneron, Aligoté is not nearly as profitable to grow as Chardonnay - consequently it tends to be relegated to lower quality vineyards. In the wrong hands and in the wrong sites it can produce thin, raspingly acidic wines that are remarkably undistinguished. However the best growers produce balanced examples with nutty and citrus hints which are most appealing to drink. The best Aligoté wines traditionally come from Bouzeron in the Côte Chalonnaise. Along with blackcurrant liqueur, it is the key ingredient of Kir.
