La Route des Blancs: 92/100. "Très beau rouge la Fortune, mûr et friand, affiné par la vendange entière, qui demande deux ans pour s`épanouir." ​

Tasting Notes: Presents a fresh bouquet with notes of black and red fruits, including blue plum, cherry, raspberry, and blackberry jelly. Hints of redcurrant and pomegranate add a tangy accent, while undertones of creamy chocolate and subtle sweet spices like cinnamon, nutmeg, and pink pepper enhance its allure. Floral aromas of peony, geranium, red carnation, and violet, along with a touch of eucalyptus, contribute to its complexity. On the palate, this wine is ample and silky, offering a velvety texture rich with flavors of ripe fruits such as Burlat cherry, blackberry, red and blue plums, pomegranate, and a hint of ripe tomato. These fruit notes are complemented by subtle spices, including various peppers, licorice stick, and peppermint. The wine`s supple tannins and vibrant energy create a superb balance, leading to a long finish with lingering spicy cherry flavors. ​

Food Pairing: Beef tartare​, Saucisson brioché (sausage in brioche), Bourguignon de joue de bœuf (beef cheek bourguignon)​

Domaine de Villaine
The winery of the de Villaine family, co-owners of the legendary Domaine de la Rommanée-Conti, is considered the highly regarded jewel of the Cote Chalonnaise. With great devotion, they dedicate themselves in particular to the cultivation of the Aligoté as the unfortunately often misunderstood and sidelined great classic among the grape varieties of Burgundy. De Villaines` decades of work around the Aligoté made a significant contribution to the fact that Bouzeron, the only municipal appellation for this grape variety in Burgundy, was created in 1997. Like the Domaine de la Romanée-Conti, the Domaine de Villaine, which is run by Aubert de Villaine`s nephew, Pierre de Benoist, also uses biodynamic farming.

Pinot Noir

Pinot Noir is probably the most frustrating, and at times infuriating, wine grape in the world. However when it is successful, it can produce some of the most sublime wines known to man. This thin-skinned grape which grows in small, tight bunches performs well on well-drained, deepish limestone based subsoils as are found on Burgundy`s Côte d`Or.

Pinot Noir is more susceptible than other varieties to over cropping - concentration and varietal character disappear rapidly if yields are excessive and yields as little as 25hl/ha are the norm for some climates of the Côte d`Or.

Because of the thinness of the skins, Pinot Noir wines are lighter in colour, body and tannins. However the best wines have grip, complexity and an intensity of fruit seldom found in wine from other grapes. Young Pinot Noir can smell almost sweet, redolent with freshly crushed raspberries, cherries and redcurrants. When mature, the best wines develop a sensuous, silky mouth feel with the fruit flavours deepening and gamey "sous-bois" nuances emerging.

The best examples are still found in Burgundy, although Pinot Noir`s key role in Champagne should not be forgotten. It is grown throughout the world with notable success in the Carneros and Russian River Valley districts of California, and the Martinborough and Central Otago regions of New Zealand.
