Les Montots is situated on a fairly steep slope with southern exposure, planted with a selection of Pinot Noir vines from Nuits-Saint-Georges chosen for their aromatic qualities and moderate yield. Les Montots is a Mercurey of its own kind, structured and rigorous, deep with a dark ruby colour. It will open up gradually with age, revealing the breadth of its complexity only after five to seven years. Depending on the vintage and your cellar, it will age and develop for fifteen to twenty years.
Tasting Notes: It expresses a very beautiful maturity. The nose and palate are correlated to the nature of the soil in Mercurey Les Montots: Clay-limestone with iron presence. This gives the wine a racy, chiselled nose with chalky notes of cooked red fruits. On the palate, the wine is astonishingly supple and silky on the first approach whilst the tannins are more present on the finish lengthening the tasting and leaving a powerful impression. Great wine with ageing potential.
Food Pairing: Red meat or game and different kinds of cheese will go well with les Montots but follow once again the caveat against soft cheeses like Camembert, Brie and Vacherin.
Domaine de Villaine
The winery of the de Villaine family, co-owners of the legendary Domaine de la Rommanée-Conti, is considered the highly regarded jewel of the Cote Chalonnaise. With great devotion, they dedicate themselves in particular to the cultivation of the Aligoté as the unfortunately often misunderstood and sidelined great classic among the grape varieties of Burgundy. De Villaines` decades of work around the Aligoté made a significant contribution to the fact that Bouzeron, the only municipal appellation for this grape variety in Burgundy, was created in 1997. Like the Domaine de la Romanée-Conti, the Domaine de Villaine, which is run by Aubert de Villaine`s nephew Pierre de Benoist, also uses biodynamic farming.
