Winemaking: To preserve their integrity, grapes are carefully harvested and sorted out by hand. Full clusters. Following the pneumatic press, juices stay in a vat overnight for a cool settling down and then are directly filled in barrels by gravity. Malolactic fermentation is done 100%,
Aging: Fermentations and aging are taking place in 400 liters barrels for 10 months with around 30% of new barrels. We only use light-toasted French oak coming mainly from Bourgogne, Allier, and Vosges forests.
Tasting Notes: Shinny golden color with green reflects. The nose is chiseled, floral, and supported by citruses aromas The nose develops scents of white-flesh fruits: peaches, and pears. It shows as well some flint stone notes. In the mouth, the wine is quite ample and well-balanced, ending in a persistent sensation of freshness.
Food Pairing: Will perfectly pair with seafood or soft cheeses. It can also be served as an aperitif.
Mercurey is a village in the Côte Chalonnaise sub-region of Burgundy. It is one of the five communal titles of Chalonnaise and produces predominantly red wines from the Pinot Noir grape variety. The appellation"s relatively rare Mercurey Blanc wines are made from Chardonnay and account for around 10% of the total output. The Côte Chalonnaise was once known as the Région de Mercurey, which gives an idea of how important this particular appellation is to the wider region.
