Vinification & Ageing: The grapes are carefully hand-harvested and sorted. Vinification occurs in a state-of-the-art underground winery utilizing natural gravity for grape movement. The wine is aged for at least a year in a natural cellar 10 meters underground, benefiting from consistent temperature and humidity levels.

Tasting Notes: Pale gold with an aromatic bouquet of citrus and white floral notes. The palate is elegant and crisp, showcasing flavours of apple and pear, balanced by refreshing acidity. The wine is round and silky, with a charming fruitiness that makes it enjoyable to drink young.

Food Pairing: Pairs well with seafood, poultry, and dishes with creamy sauces.

Domaine Bouchard Père & Fils, founded in 1773, is located in Burgundy, one of the premium wine-growing regions of France. Stretching across 48 km with over 450 plots, the estate practices sustainable winemaking to honour the Burgundian terroirs. The state-of-the-art Saint Vincent winery, built in 2005, features underground facilities that ensure natural gravity vinification and optimal ageing conditions. With a deep respect for each parcel of terroir, the winery produces Grand Crus which are unique expressions of the Burgundy region.

The Grape
Chardonnay
Chardonnay is the "Big Daddy" of white wine grapes and one of the most widely planted in the world. It is suited to a wide variety of soils, though it excels in soils with a high limestone content as found in Champagne, Chablis, and the Côte D`Or.

Burgundy is Chardonnay`s spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvelous poise, elegance and balance. They are unquestionably the finest dry white wines in the world. Chardonnay plays a crucial role in the Champagne blend, providing structure and finesse, and is the sole grape in Blanc de Blancs.

It is quantitatively important in California and Australia, is widely planted in Chile and South Africa, and is the second most widely planted grape in New Zealand. In warm climates Chardonnay has a tendency to develop very high sugar levels during the final stages of ripening and this can occur at the expense of acidity. Late picking is a common problem and can result in blowsy and flabby wines that lack structure and definition.

Recently in the New World, we have seen a move towards more elegant, better- balanced and less oak-driven Chardonnays, and this is to be welcomed.
