Domaine Michel Sarrazin is known for its consistent quality and is highly regarded in the Côte Chalonnaise region for its expressive and elegant wines.

Vinification and Ageing: Crafted from 100% Pinot Noir grapes sourced from the prestigious La Grand Berge vineyard, located in the Givry appellation of Burgundy, France. The vineyard`s prime location on limestone-rich slopes contributes to the wine`s minerality and finesse.

The grapes are carefully hand-harvested to preserve their quality. Traditional vinification methods are employed, including gentle fermentation to extract vibrant color and delicate tannins. The wine undergoes malolactic fermentation, enhancing its roundness and complexity. It is then aged in French oak barrels, with around 25% new oak, which adds structure and subtle notes of spice and vanilla while maintaining the purity of the fruit. The ageing process lasts approximately 12 to 18 months before bottling.

Tasting Notes: Deep ruby red with garnet reflections. Aromas of ripe red berries, such as cherry and raspberry, intertwined with floral notes of violet. Hints of forest floor, light tobacco, and a touch of vanilla from oak ageing add complexity. Elegant and balanced, with a harmonious blend of bright acidity and silky tannins. The palate reveals layers of red fruit flavours, subtle minerality, and a long, refined finish. A sophisticated and expressive Pinot Noir that showcases the finesse and terroir of the Givry 1er Cru vineyard. It is approachable in its youth but also has the potential to age gracefully.

Food Pairing: Charcuterie, mushroom tartlets. Roast duck with berry sauce, and herb-roasted chicken. Grilled lamb chops, and beef tenderloin with red wine reduction. Pheasant or venison with wild mushroom sauce. Soft cheeses like Brie or Camembert, as well as mild aged cheeses. Wild mushroom risotto, truffle pasta.

Special Serving Tip: Best served slightly chilled at 16–18 degrees Celsius. Decanting for about an hour enhances its aromatic complexity and depth. While delightful to drink now for its vibrant fruit character, it can be cellared for up to 8–10 years, gaining more earthy and complex notes with age.

Pinot Noir

Pinot Noir is probably the most frustrating, and at times infuriating, wine grape in the world. However when it is successful, it can produce some of the most sublime wines known to man. This thin-skinned grape which grows in small, tight bunches performs well on well-drained, deepish limestone based subsoils as are found on Burgundy`s Côte d`Or.

Pinot Noir is more susceptible than other varieties to over cropping - concentration and varietal character disappear rapidly if yields are excessive and yields as little as 25hl/ha are the norm for some climates of the Côte d`Or.

Because of the thinness of the skins, Pinot Noir wines are lighter in colour, body and tannins. However the best wines have grip, complexity and an intensity of fruit seldom found in wine from other grapes. Young Pinot Noir can smell almost sweet, redolent with freshly crushed raspberries, cherries and redcurrants. When mature, the best wines develop a sensuous, silky mouth feel with the fruit flavours deepening and gamey "sous-bois" nuances emerging.

The best examples are still found in Burgundy, although Pinot Noir`s key role in Champagne should not be forgotten. It is grown throughout the world with notable success in the Carneros and Russian River Valley districts of California, and the Martinborough and Central Otago regions of New Zealand.
