Vinification and Ageing: Hand-harvested grapes are 30% whole-cluster fermented with natural yeasts. A short, cold pre-fermentation enhances extraction, followed by a 15-day maceration with pigeages. The wine ages for 15 months in 228L French oak barrels (50% new) and an additional 4 months in tanks before bottling.
Tasting Notes: Deep red color with fresh aromas of strawberries, raspberries, peppermint, and eucalyptus. The palate is elegant, with smooth tannins and a well-balanced acidity.
Food Pairing: Veal ‘grenadins’ with foie gras
The vineyard benefits from a prime south/southeast-facing terroir, from two plots planted in 1922 and 1945. Recognized as one of the best Echezeaux, it balances power and finesse, with a cellaring potential of 15–20 years. It is best served at 13–14°C.
