Vinification and Ageing: Hand-harvested in mid-September, the grapes undergo a natural drying process for 3–4 months, losing 40–45% of their weight. After destemming and soft pressing in January, the wine matures for 48 months in French oak barriques, followed by 6 months in large Slavonian oak barrels and about a year of bottle aging.
Tasting Notes: Intense ruby red with compact color. The nose is rich and broad, dominated by toasted notes of coffee and tobacco. On the palate, it has a powerful structure with prominent yet balanced tannins, fresh acidity, and a long, refined finish.
Food Pairing: Ideal with rich meats, aged cheeses, and complex dishes.
Fieramonte represents the deep tradition of Valpolicella, rooted in its upper hillside vineyard with a south-facing slope. Its exposure ensures balanced ripening, and its production honors the land’s historical excellence. Giovanni Allegrini cherished its location, recognizing how the morning sun enhances the vineyard’s character and quality.
